Formed Product: Three (3) different tenderizers are available for formed products: Standard: Cuts the formed portion on both top and bottom. It improves the appearance and, for breaded products, creates a better hold for the batter and breading. Stretch: Cuts the formed portion on both top and bottom and, as the name implies, will elongate the portion. Used for cooking operations where shape is important. Perforator: Cuts the formed portion on both top and bottom with larger width blades that are blunt on the edge. Product that has been perforated has about 20 to 25% less cooking time. Solid Muscle Product: With the wide variety of products to be tenderized, we offer a few different options to fit your specific product requirements. Different diameter knives are used for different products. Portion cut products will use our smallest diameter while ham processing will require the largest.
